This is so easy we’re hesitant to call it a recipe, but it is a fantastic quick lunch that you can make with ingredients collected from your local Community Fridge.
Let me present… tomatoes on toast!

Simply take a portion of tomatoes – here we’ve used cherry plum tomatoes but you can use ordinary cherry tomatoes or even standard tomatoes. If you are using cherry tomatoes, don’t bother to cut them up. For standard tomatoes, cut them into chunks to help them cook quickly and to make it easier to eat!
Pop them in a small pan on the hob with some butter, garlic olive oil or the cooking oil of your choice. The taste will come through, so we suggest a decent quality olive oil to help elevate your lunch.
Cook the tomatoes down for 5 minutes or so. They are done when they look soft and you can squash them with the back of a spoon. Cherry tomatoes will ‘pop’ open as the skin softens, giving you a nice juice to dip your bread in.
Here, we’ve served the tomatoes on a slice of luxury sourdough collected by our lovely volunteers from a local supermarket, but you can serve with whatever you have. Top an English muffin, pour over crumpets, or go for standard sandwich bread, whatever you fancy.
Here at HQ, we favour a twist of black pepper and some celery salt to finish, so add your seasoning to taste and enjoy!
