Cinnamon crumpets

We saw a viral recipe so we wanted to give it a go!

The short video didn’t have the best instructions, but honestly, there isn’t much to this recipe.

We used a pack of Marks and Spencer crumpets that had come from the Community Fridge and had been frozen at home. If you’ve done the same, defrost your crumpets as you can’t slice them when they are rock solid!

Slice the crumpets into cubes and put them in a bowl.

Melt some butter with a tablespoon of sugar in the microwave. We used way too much butter in the end, although it is hard to go wrong! We could have got away with much less – just eyeball it. If you do use too much, all it means is that your crumpet bites will take longer to crisp up in the oven later.

Shake some powdered/ground cinnamon into the melted butter and sugar. Mix it all together.

Pour the butter over the crumpet pieces and toss it all together in a bowl.

Tip the bowl out on to a baking sheet. We didn’t butter the roasting pan that we used – there was plenty of butter in there already!

Pop the roasting pan or baking sheet into the oven and let the crumpets crisp up. This took longer than we were expecting, but do keep an eye on them as you don’t want them to burn. Check them regularly and toss them around a bit in the pan to make sure they toast evenly.

When they are crispy and smelling great, tip them into a serving bowl, give everyone a fork and dive in!

These would also be nice with a fruity dipping sauce or made slightly smaller and as a sweet crouton to top ice cream.
