Butternut Squash ‘rice’

Want something different as a side dish? How about trying butternut squash ‘rice’?

This is how to do it.

Take your butternut squash and slice it into chunks that will fit in your food processor.

Next, use the food processor to chop the chunks into pieces that are small like ‘rice’. Don’t pulverise it too much or it will end up more like a puree, and while that’s good, it’s not what we’re going for here.

Once you’ve got your chopped up butternut squash, you can either store it raw or freeze it until you are ready to use it. In the image below you can see that I’ve used silicon containers to freeze in one-cup portions which is about the right size for a single serving. This is raw butternut squash that has been portioned for freezing.

When you are ready to eat it, simply remove it from the freezer and defrost it. Then you can cook it. I haven’t tried cooking from frozen and I wouldn’t recommend it.

Cook either by microwaving for a few minutes or stir fry. Stir fry in garlic oil for extra taste!

This makes a really healthy, alternative side dish for a curry or any other meal that you would serve with rice. And it’s a convenient way to use up that squash you picked up at the Community Fridge!
